Biryani is a main course in Indian food. It is a mixture of
cooked and fried rice with some kind of vegetables or chicken, mutton, prawn,
egg, fish, yogurt etc. Indian Biryani is famous in the world, however it was originated
from Persia and brought by Mughals. In Persian the word ‘Birinj’ means ‘fried
before cooking’.
Indian Biryani is also several types based on its origin and
culture; like Delhi Biryani, Punjabi Biryani, Hyderabadi Biryani, Kolkata
Biryani, Thalassery Biryani in Kerala, Ambur or Vaniyambadi Biryani in Tamil
Nadu, Chettinad Biryani in Tamil Nadu, Memoni in Gujarat. Biryani is also a
main course in Pakistan, which is famous in the name of Sindhi Biryani. Burma,
Arabian Countries, Iran, Indonesia, Singapore, Malaysia, and Philippines country
also serve Biryani in festivals.
Hyderabadi Dum Biryani is most popular in the world due to
its spices and method of preparation. For Hyderabadis, Biryani is the crown
dish. In Hyderabadi Dum Biryani, the mutton is marinated and cooked with rice
on a low flame/fire for aromatic flavour and delicious taste.
The main ingredient of Biryani is Basmati Rice, chicken,
mutton, prawn, fish, egg, beef etc. that must include a little clarified
butter, cardamom, pepper, cloves, bay leaves, coriander, mint leaves, ginger,
onions, tomatoes, saffron. Biryani may be served with raita or curd, and curry.
